Tofu Scramble Delight - Vegan

Ingrédients
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 3 cloves garlic, minced
- 1 pound firm tofu, drained and crumbled
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black salt
- 1/4 teaspoon black pepper
- 1/2 cup cherry tomatoes, halved
- 2 cups baby spinach
- 1 tablespoon nutritional yeast
- 1 tablespoon soy sauce
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and sauté until soft, about 5 minutes.
- Add the red and green bell peppers, and cook for another 3-4 minutes until tender.
- Stir in the garlic and cook for about 1 minute until fragrant.
- Add the crumbled tofu to the skillet and mix well with the vegetables.
- Sprinkle turmeric, cumin, smoked paprika, black salt, and black pepper over the tofu and vegetables, stirring to incorporate the spices.
- Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Add the baby spinach and cook until wilted, about 2 minutes.
- Sprinkle nutritional yeast over the scramble and mix well.
- Add soy sauce and stir to combine all ingredients evenly.
- Garnish with fresh cilantro and serve warm.
