Bran Apple Muffins - Vegetarian

Ingrédients
- 1 cup wheat bran
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsweetened applesauce
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 large apple, peeled, cored, and finely chopped
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the wheat bran, flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together applesauce, milk, oil, egg, and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
- Fold in the chopped apple and walnuts, if using.
- Spoon the batter evenly into the prepared muffin tin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
