Ingrédients
- 1 cup orzo
- 1/4 cup red onion, finely chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup roasted red peppers, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons capers
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar

Instructions
- Cook the orzo according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked orzo, red onion, cherry tomatoes, cucumber, Kalamata olives, roasted red peppers, fresh parsley, and capers.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and black pepper.
