Ingrédients
- 1 pound boneless, skinless chicken breasts, sliced into strips
- 1 tablespoon olive oil
- 1 red red bell pepper, sliced
- 1 green green bell pepper, sliced
- 1 yellow yellow bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh lime juice
- 8 whole whole wheat tortillas
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken strips and cook, turning occasionally, until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the bell peppers, onion, and garlic. Sauté until the vegetables are tender-crisp, about 5-6 minutes.
- Stir in the cumin, chili powder, paprika, oregano, salt, and black pepper.
- Return the chicken to the skillet and pour in the lime juice. Stir to combine and cook for an additional 2-3 minutes, until everything is well coated and heated through.
- Warm the tortillas in a separate pan or in the microwave.
- Serve the chicken and vegetable mixture on the warm tortillas and enjoy.
