Ingrédients
- 1 cup sun-dried tomatoes (packed in oil)
- 1/2 cup grated Parmesan cheese

- 1/4 teaspoon black pepper
- 1/3 cup fresh basil leaves

Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of the pasta cooking water and then drain the pasta.
- In a food processor, combine sun-dried tomatoes, Parmesan cheese, toasted pine nuts, garlic, salt, pepper, and fresh basil leaves.
- With the processor running, slowly drizzle in the extra virgin olive oil until the pesto reaches a smooth consistency.
- In a large bowl, mix the cooked pasta with the sun-dried tomato pesto. Add a small amount of the reserved pasta cooking water to help coat the pasta evenly with the pesto sauce.
- Serve immediately, garnished with additional basil leaves and a sprinkle of Parmesan cheese if desired.
