Homemade Fruit and Nut Bars - High Protein

Ingrédients
- 1 cup rolled oats
- 1/2 cup dried apricots, chopped
- 1/2 cup dried figs, chopped
- 1/2 cup dried cranberries
- 1/2 cup almond butter
- 1/4 cup honey
- 1/4 cup unsweetened coconut flakes
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup chia seeds
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
- In a large mixing bowl, combine oats, dried apricots, dried figs, dried cranberries, coconut flakes, sunflower seeds, pumpkin seeds, and chia seeds.
- In a small saucepan over low heat, melt almond butter and honey until smooth. Remove from heat and stir in vanilla extract and salt.
- Pour the almond butter mixture over the dry ingredients and mix until well combined.
- Press the mixture firmly and evenly into the prepared baking dish.
- Bake for 15-20 minutes, or until the edges are golden brown.
- Allow to cool completely in the baking dish before cutting into bars.
