Ingrédients
- 1 cup quinoa
- 2 cups water
- 1/2 teaspoon salt
- 1 cup blueberries
- 1/2 cup sliced almonds
- 1/4 cup red onion, finely chopped
- 1 cup baby spinach, roughly chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/4 teaspoon black pepper
Instructions
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the water and salt to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
- Remove quinoa from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.
- In a large mixing bowl, combine the cooled quinoa, blueberries, sliced almonds, red onion, baby spinach, feta cheese, and fresh mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey, and black pepper until well combined.
