Ingrédients
- 4 cups cherry tomatoes
- 3 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cloves garlic, minced
- 1 cup ricotta cheese
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon lemon zest
- 1/2 teaspoon red pepper flakes
- 1 tablespoon balsamic glaze
- 1/4 cup grated parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
- Roast the tomatoes in the preheated oven for 20-25 minutes, until they are soft and slightly charred.
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- In a mixing bowl, combine the ricotta cheese, chopped basil leaves, lemon zest, red pepper flakes, and sautéed garlic.
