Edamame and Avocado Summer Rolls - Vegan
The Edamame and Avocado Summer Rolls offer a refreshing and light option that's perfect for warm weather or a healthy snack. Encased in soft rice paper, the rolls burst with the vibrant flavors of crunchy cucumber, sweet carrots, creamy avocado, and fresh herbs like cilantro and mint. Ingrédients
- 1 cup shelled edamame
- 2 medium avocados, sliced
- 1 large cucumber, julienned
- 2 carrots, carrots, peeled and julienned
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 8 rice rice paper wrappers
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon fresh ginger, grated
- 1 clove garlic, minced
- 1 teaspoon honey
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes
Instructions
- Prep all the vegetables and ingredients so they're ready for assembly. Cook the edamame according to the package instructions and let it cool.
- Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds to soften.
- Lay the softened rice paper wrapper on a clean, damp kitchen towel.
- Place a few slices of avocado, a small handful of edamame, cucumber, carrots, cilantro, and mint in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom. Repeat with the remaining wrappers and ingredients.
- In a small bowl, whisk together the soy sauce, rice vinegar, grated ginger, minced garlic, honey, sesame oil, and red pepper flakes to make the dipping sauce.
- Serve the summer rolls with the soy ginger dipping sauce on the side.
