These meatballs combine ground beef and pork with Parmesan cheese, almond flour, and fresh herbs, creating a moist and savory bite each time.
Ingrédients
- 1 pound ground beef
- 1 pound ground pork
- 1/2 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1/4 cup chopped fresh parsley
- 2 large eggs
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1 can crushed tomatoes (28 oz)
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- In a large bowl, combine the ground beef, ground pork, Parmesan cheese, almond flour, parsley, eggs, garlic, oregano, salt, and black pepper. Mix thoroughly until all ingredients are well combined.
- Form the mixture into 1-inch meatballs and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking until browned on all sides, about 5-7 minutes per batch. Remove and set aside.
- In the same skillet, add the diced onion and garlic. Sauté until the onion is translucent and garlic is fragrant, about 3 minutes.
- Add the crushed tomatoes, dried basil, oregano, salt, black pepper, and red pepper flakes (if using). Stir to combine.
- Return the meatballs to the skillet, nestling them into the marinara sauce. Simmer on low heat for 20-25 minutes, allowing the flavors to meld and the meatballs to cook through.
- Serve hot, garnished with additional chopped parsley and a side of zucchini noodles or a fresh green salad for a complete keto-friendly meal.
