Ingrédients
- 1 cup sun-dried tomatoes, packed in oil
- 1/2 cup Parmesan cheese, grated
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/2 cup fresh basil leaves
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 12 oz pasta of your choice
- 1/4 cup pasta water
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water and then drain the pasta.
- In a food processor, combine the sun-dried tomatoes, Parmesan cheese, pine nuts, garlic, and basil leaves. Pulse until finely chopped.
- With the food processor running, gradually add olive oil and blend until the mixture is smooth. Season with salt and pepper to taste.
- In a large bowl, toss the cooked pasta with the sun-dried tomato pesto, adding reserved pasta water as needed to achieve desired consistency.
- Serve immediately, garnished with extra Parmesan cheese and basil leaves if desired.
