Ingrédients
- 3 cups fresh grapefruit juice (about 3 grapefruits)
- 1/2 cup water
- 1/2 cup sugar
- 2 tablespoons fresh rosemary leaves
Instructions
- In a small saucepan, combine the water, sugar, and rosemary leaves. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it steep for 15 minutes.
- Strain the syrup, discarding the rosemary leaves, and let it cool completely.
- In a medium bowl, combine the grapefruit juice and the cooled rosemary syrup.
- Pour the mixture into a shallow dish and place it in the freezer.
- Every 30 minutes, use a fork to scrape the mixture, breaking up the ice crystals as they form. Continue this process until the granita is fully frozen, about 3-4 hours.
- Once ready, serve the granita in chilled bowls or glasses, and garnish with a small sprig of rosemary if desired.
