Ingrédients
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup pumpkin puree
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 cup mini chocolate chips
- 3 tablespoons chia seeds
- 1/2 teaspoon cinnamon
- pinch of of salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, pumpkin puree, honey, and vanilla extract. Mix until well combined.
- Add the pumpkin pie spice, mini chocolate chips, chia seeds, cinnamon, and a pinch of salt. Stir until all ingredients are evenly distributed.
- Using a small cookie scoop or your hands, form the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Refrigerate the energy balls for at least 1 hour, or until they are firm.
- Store the energy balls in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 1 month.
