The Smoky Corn and Heirloom Tomato Garden Salad is a celebration of summer's bounty, combining vibrant and sweet heirloom cherry tomatoes with smoky, charred corn. This beautiful salad is not only visually stunning but also packs a punch of flavor with the addition of fresh basil, a hint of vinegar, and crumbled feta cheese.
Ingrédients
- 4 ears ears fresh corn, husked
- 2 cups heirloom cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1/4 cup fresh basil, torn
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat your grill to medium-high heat.
- Brush the corn cobs lightly with olive oil and place them on the grill.
- Grill the corn, turning occasionally, until charred and tender, about 10 minutes.
- Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a large bowl.
- In the same bowl, add the halved cherry tomatoes, red onion, and fresh basil.
- In a small bowl, whisk together the remaining olive oil, red wine vinegar, smoked paprika, sea salt, and black pepper.
- Pour the dressing over the salad and toss everything together gently to coat.
- Sprinkle the crumbled feta cheese over the top and give it a final gentle toss.
- Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
