Ingrédients
- 2 large chicken breasts
- 1 cup pickle juice
- 2 teaspoons granulated sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 egg egg
- 1/2 cup milk
- 1 cup all-purpose flour
- 1 tablespoon powdered sugar
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon baking powder
- 4 brioche brioche buns
- 1/2 cup mayonnaise
- 4 slices pickles
- vegetable oil oil for frying
Instructions
- Place chicken breasts in between two pieces of plastic wrap and pound to an even thickness.
- Marinate chicken in pickle juice for 30 minutes to 1 hour in the refrigerator.
- Mix the flour, powdered sugar, paprika, garlic powder, onion powder, cayenne pepper, and baking powder in a bowl.
- In a separate bowl, whisk the egg and milk together.
- Remove chicken from the pickle juice and pat dry.
- Dredge chicken in the flour mixture, then dip into the egg mixture, then back into the flour mixture, coating evenly each time.
- Heat oil in a deep skillet to 350°F (175°C).
- Fry the chicken breasts until golden brown, about 4-5 minutes per side, or until internal temperature reaches 165°F (74°C).
- Place fried chicken breasts on paper towels to drain excess oil.
- To assemble, spread mayonnaise on the bottom half of each brioche bun, place one chicken breast on each bun, top with a slice of pickle and the top half of the bun.
