Ingrédients
- 1 cup orzo pasta
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring 2 cups of water to a boil in a medium pot. Add the orzo and cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
- In a large bowl, combine the cooked orzo, cherry tomatoes, Kalamata olives, red onion, feta cheese, and fresh parsley.
