Ingrédients
- 1 1/2 1/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup ice water
- 3 larges peaches, thinly sliced
- 1 cup raspberries
- 2 tablespoons cornstarch
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 large egg, beaten
- 1 tablespoon turbinado sugar
Instructions
- In a large bowl, combine the flour, granulated sugar, and salt. Add the chilled butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, a tablespoon at a time, until the dough begins to come together. Form the dough into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to the prepared baking sheet.
- In a large bowl, toss the sliced peaches, raspberries, cornstarch, brown sugar, vanilla extract, and lemon juice until well combined.
- Arrange the fruit mixture in the center of the dough, leaving a 2-inch border around the edges. Fold the edges of the dough over the fruit, pleating as needed to create a rustic look.
- Brush the edges of the dough with the beaten egg and sprinkle with turbinado sugar.
- Bake for 35-40 minutes, or until the crust is golden brown and the fruit is bubbly. Allow the galette to cool slightly before serving.
