Ingrédients
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 5 cups broccoli florets
- 2 medium carrots, finely diced
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 1/4 teaspoon nutmeg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Pour in the vegetable broth and add the broccoli florets and diced carrots. Bring to a boil, then reduce to a simmer. Cover and cook until the vegetables are tender, about 20 minutes.
- Return the pureed soup to the pot and stir in the heavy cream and shredded cheddar cheese until melted and combined.
- Season with nutmeg, salt, and black pepper. Adjust seasoning to taste.
- Serve hot, with additional shredded cheese on top if desired.
