Mexican Pozole Soup with Hominy and Cilantro - Halal

Ingrédients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 pound pork shoulder, cut into cubes
- 8 cups chicken broth
- 3 cups hominy, drained and rinsed
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 2 dried dried ancho chiles, seeded and chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 lime, lime, cut into wedges
- 1/2 cup fresh cilantro, chopped
- 1/2 cup radishes, thinly sliced
- 1/2 cup shredded cabbage
- 2 tablespoons chopped fresh jalapenos
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, sauté until softened, about 4-5 minutes.
- Add the pork shoulder and brown on all sides, about 6-8 minutes.
- Pour in the chicken broth and bring to a boil.
- Stir in the hominy, ground cumin, dried oregano, chopped ancho chiles, salt, black pepper, and cayenne pepper.
- Reduce heat and let the mixture simmer for about 1 hour, or until the pork is tender.
- Adjust seasoning with additional salt and pepper, if needed.
- Serve the soup hot, garnished with fresh cilantro, radishes, shredded cabbage, chopped jalapenos, and lime wedges.
