Creamy Celery Soup with Dill and Lemon - Vegetarian

Ingrédients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 stalks stalks celery, chopped
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons fresh dill, chopped
- 1 lemon, lemon, zested and juiced
- Salt and and black pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the chopped celery and diced potatoes, cooking for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 20 minutes.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream, chopped dill, lemon zest, and lemon juice. Season with salt and black pepper to taste.
- Simmer for an additional 5 minutes, allowing the flavors to meld together.
- Serve hot, garnished with additional dill if desired.
