Vegan Blueberry Almond Oat Bars - Vegan
The Vegan Blueberry Almond Oat Bars, or as we lovingly call them, Berry Almond Bliss Bars, are a delicious blend of wholesome ingredients. Each bar is packed with nutrient-rich oats, crunchy almonds, and fresh, juicy blueberries, making them as nutritious as they are tasty.
Ingrédients
- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup sliced almonds
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup fresh blueberries
- 1 tablespoon chia seeds
Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, sliced almonds, baking soda, and salt. Stir until well mixed.
- In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until thoroughly combined.
- Carefully fold in the fresh blueberries and chia seeds.
- Transfer the mixture to the prepared baking pan, pressing it down firmly to create an even layer.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool completely in the pan on a wire rack before cutting into squares.
