Ingrédients
- 2 cups fresh spinach, chopped
- 1 cup cottage cheese
- 1/2 cup grated cheddar cheese
- 2 large eggs
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 clove garlic, minced
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line with 12 muffin liners.
- In a large bowl, whisk together the eggs, olive oil, salt, and black pepper until well combined.
- Add the cottage cheese and mix until the texture is smooth. Then, fold in the cheddar cheese.
- Sift the whole wheat flour and baking powder into the wet ingredients, and stir until just combined.
- Gently fold in the chopped spinach and minced garlic.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
