  • 1 cup rolled oats
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried figs, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
  • In a large mixing bowl, combine oats, dried apricots, dried figs, dried cranberries, coconut flakes, sunflower seeds, pumpkin seeds, and chia seeds.
  • In a small saucepan over low heat, melt almond butter and honey until smooth. Remove from heat and stir in vanilla extract and salt.
  • Pour the almond butter mixture over the dry ingredients and mix until well combined.
  • Press the mixture firmly and evenly into the prepared baking dish.
  • Bake for 15-20 minutes, or until the edges are golden brown.
