Vegan Roasted Garlic Mashed Potatoes - Vegan

Ingrédients
- 2 pounds pounds potatoes, peeled and chopped
- 6 cloves garlic, roasted
- 1/4 cup olive oil
- 1/2 cup unsweetened almond milk
- 1 tablespoon nutritional yeast
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the garlic cloves in aluminum foil and roast in the preheated oven for 30-35 minutes, until they are soft and golden.
- While the garlic is roasting, peel and chop the potatoes. Place them in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Squeeze the roasted garlic out of the skins and add to the potatoes.
- Add the olive oil, almond milk, nutritional yeast, salt, and black pepper to the pot.
- Mash the potatoes until smooth and creamy. Adjust seasoning as needed.
- Serve hot, garnished with chopped fresh parsley if desired.
