Ingrédients
  

  • 2 pounds pounds potatoes, peeled and chopped
  • 6 cloves garlic, roasted
  • 1/4 cup olive oil
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon nutritional yeast
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Wrap the garlic cloves in aluminum foil and roast in the preheated oven for 30-35 minutes, until they are soft and golden.
  • While the garlic is roasting, peel and chop the potatoes. Place them in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Squeeze the roasted garlic out of the skins and add to the potatoes.
  • Add the olive oil, almond milk, nutritional yeast, salt, and black pepper to the pot.
  • Mash the potatoes until smooth and creamy. Adjust seasoning as needed.
  • Serve hot, garnished with chopped fresh parsley if desired.
