- 1 pound ground beef
- 1 tablespoon olive oil
- 1 packet packet taco seasoning mix
- 2 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels, cooked
- 1 avocado, avocado, sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/4 cup fresh cilantro, chopped
- 1 lime, lime, cut into wedges
- 1/2 cup tortilla chips, crushed
Instructions
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 7-10 minutes.
- Stir in the taco seasoning mix and 1/4 cup water. Simmer until the beef is fully coated and cooked through, about 5 minutes.
- In a large salad bowl, layer the romaine lettuce, cherry tomatoes, red onion, black beans, and corn.
- Add the seasoned ground beef on top of the salad layers.
- Top with sliced avocado, shredded cheddar cheese, sour cream, salsa, and fresh cilantro.
- Garnish with crushed tortilla chips and lime wedges before serving.
