Ingrédients
- 1 cup couscous
- 1+1/4 cups boiling water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 red onion, diced
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 lemon, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your grill to medium-high heat.
- Place the diced bell peppers, zucchini, and red onion in a large bowl.
- Drizzle with 1 tablespoon of olive oil and toss to coat. Season with a pinch of salt and pepper.
- Grill the vegetables for 5-7 minutes until tender and slightly charred. Set aside to cool.
- In a large bowl, pour the couscous and add the boiling water. Cover and let it sit for 5 minutes, then fluff with a fork.
- Add the grilled vegetables, cherry tomatoes, crumbled feta cheese, parsley, and mint to the couscous.
- In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss to coat evenly.
- Serve immediately or refrigerate for an hour to let the flavors meld together.
