Ingrédients
- 2 medium eggplants, sliced into 1/2-inch rounds
- 1 teaspoon salt
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 large eggs, beaten
- 1 cup marinara sauce
- 1,5 cups shredded mozzarella cheese
- 1/4 cup fresh basil, chopped (for garnish)
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Lay the eggplant slices on a baking sheet and sprinkle both sides with salt. Let sit for 20 minutes to draw out excess moisture, then pat dry with paper towels.
- In one bowl, combine breadcrumbs, grated Parmesan cheese, dried basil, and dried oregano. In another bowl, beat the eggs.
- Dredge each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium heat. Fry eggplant slices until golden brown on both sides, about 3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
- Spread 1/2 cup of marinara sauce in the bottom of a baking dish. Layer half of the eggplant slices over the sauce. Top with another 1/2 cup of marinara sauce and 3/4 cup of shredded mozzarella cheese.
- Repeat layering with the remaining eggplant, marinara sauce, and mozzarella cheese.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
