Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Lay the eggplant slices on a baking sheet and sprinkle both sides with salt. Let sit for 20 minutes to draw out excess moisture, then pat dry with paper towels.
  • In one bowl, combine breadcrumbs, grated Parmesan cheese, dried basil, and dried oregano. In another bowl, beat the eggs.
  • Dredge each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
