Vegan Red Lentil Dahl - Vegan
The Vegan Red Lentil Dahl is a delicious blend of spices, coconut milk, and tender red lentils that forms a rich, creamy, and aromatic dish. Ingrédients
- 1 tablespoon coconut oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 cup red lentils, rinsed
- 1 can coconut milk (400ml)
- 2 cups vegetable broth
- 1 medium tomato, chopped
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat the coconut oil in a large pot over medium heat.
- Add the onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and ginger and cook for another minute.
- Add the turmeric, cumin, coriander, cinnamon, and cayenne pepper, stirring to coat the onions and release the spices' aromas.
- Add the red lentils, coconut milk, vegetable broth, and chopped tomato. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender and the dahl has thickened.
- Season with sea salt and black pepper to taste.
- Stir in the fresh lemon juice and chopped cilantro just before serving.
