Vegan lentil and vegetable stew - Vegan

Ingrédients
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 cup green lentils, rinsed
- 1 large carrot, diced
- 2 medium potatoes, diced
- 1 cup diced tomatoes
- 4 cups vegetable broth
- 2 cups chopped kale
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and sauté until soft, about 5 minutes.
- Add the garlic, cumin, coriander, smoked paprika, and cayenne pepper, cooking for another minute until fragrant.
- Stir in the lentils, carrots, potatoes, diced tomatoes, and vegetable broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30 minutes or until the lentils and vegetables are tender.
- Add the kale, salt, and black pepper, and cook for an additional 5 minutes until the kale is wilted.
- Stir in the lemon juice and fresh parsley just before serving.
