Ingrédients
- 3 lb chicken pieces (legs, thighs, wings)
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 1 tablespoon black pepper
- 1 tablespoon salt
- 1 tablespoon dried oregano
- 1 tablespoon chili powder
- 1 tablespoon dried basil
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon white pepper
- 1 teaspoon thyme
- 1 teaspoon ginger powder
- 1 teaspoon mustard powder
- 2 teaspoons celery salt
- 1 quart quart vegetable oil (for frying)
Instructions
- Place the chicken pieces in a large bowl and cover them with buttermilk. Cover and refrigerate for at least 2 hours, or overnight for best results.
- In a large, shallow dish, combine the flour with all the spices: paprika, black pepper, salt, oregano, chili powder, basil, onion powder, garlic powder, white pepper, thyme, ginger powder, mustard powder, and celery salt. Mix well.
- Remove the chicken from the buttermilk, allowing excess buttermilk to drip off.
- Dredge each piece of chicken in the seasoned flour mixture, making sure it’s completely coated. Place the coated pieces on a wire rack and let them sit for 10 minutes to set the coating.
- While the chicken is resting, heat vegetable oil in a large deep frying pan or Dutch oven to 350°F (175°C).
- Carefully add the chicken pieces to the hot oil, being careful not to crowd the pan. Fry in batches if necessary.
- Fry the chicken for about 15-18 minutes, turning occasionally, until the coating is golden brown and the internal temperature reaches 165°F (74°C).
- Remove the chicken from the oil and place it on a wire rack to drain excess oil. Let it rest for a few minutes before serving.
