  • Place the chicken pieces in a large bowl and cover them with buttermilk. Cover and refrigerate for at least 2 hours, or overnight for best results.
  • In a large, shallow dish, combine the flour with all the spices: paprika, black pepper, salt, oregano, chili powder, basil, onion powder, garlic powder, white pepper, thyme, ginger powder, mustard powder, and celery salt. Mix well.
  • Remove the chicken from the buttermilk, allowing excess buttermilk to drip off.
  • Dredge each piece of chicken in the seasoned flour mixture, making sure it’s completely coated. Place the coated pieces on a wire rack and let them sit for 10 minutes to set the coating.
