  • 4 large chicken breasts

  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon onion powder

  • 1 tablespoon butter

Instructions
 

  • Season the chicken breasts with salt, pepper, onion powder, basil, and oregano.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the butter and minced garlic, cooking until fragrant, about 1 minute.
  • Add the chopped sun-dried tomatoes and cook for another 2-3 minutes.
  • Reduce the heat to medium and pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream and Parmesan cheese, mixing until well combined.
  • Add the fresh spinach and cook until wilted, about 2 minutes.
  • Return the chicken breasts to the skillet, spooning some of the sauce over the top.
  • Simmer for another 3-5 minutes to heat the chicken through and thicken the sauce.
