Ingrédients
- 4 large tomatoes
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 medium red onion, finely chopped
- 1/2 cup fresh basil leaves, finely chopped
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon red pepper flakes
- Juice of of 1 lime
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the tomatoes in half and place them on a baking sheet lined with parchment paper.
- Drizzle the tomatoes with olive oil and sprinkle with salt, black pepper, and garlic powder.
- Roast the tomatoes in the oven for about 20-25 minutes, until they are soft and slightly charred.
- Remove the tomatoes from the oven and let them cool.
- Once cooled, chop the tomatoes and place in a mixing bowl.
- Add the finely chopped red onion, fresh basil, balsamic vinegar, red pepper flakes, and lime juice to the tomatoes.
- Stir well to combine all the ingredients.
- Adjust seasoning with more salt and pepper if needed.
- Serve immediately or refrigerate for at least an hour to let the flavors meld.
