Edamame Ginger Dip - Vegan

Ingrédients
- 2 cups shelled edamame
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon fresh ginger, finely chopped
- 2 cloves garlic, minced
- 1/4 cup scallions, finely chopped
- 1/2 cup water
- 1/4 teaspoon black pepper
Instructions
- Cook the shelled edamame according to package instructions, then drain and let cool.
- In a blender or food processor, combine the edamame, soy sauce, rice vinegar, sesame oil, fresh ginger, and garlic. Blend until smooth.
- Add water gradually to the mixture while blending, until the dip reaches your desired consistency.
- Once smooth, transfer the dip to a bowl and stir in the chopped scallions and black pepper.
- Taste and adjust seasoning if necessary, then serve immediately.
