Dulce de Leche Cheesecake - Gluten Free

Ingrédients
- 1 and and 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packs packs (8oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup dulce de leche
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- Additional dulce dulce de leche for topping (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- Mix the graham cracker crumbs and melted butter in a bowl until the mixture resembles wet sand.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then let it cool slightly.
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.
- Fold in 1 cup of dulce de leche and the heavy cream, mixing until fully incorporated.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is just set and a toothpick inserted comes out mostly clean.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, drizzle additional dulce de leche over the top, if desired.
