Apple and Cinnamon Compote - Vegetarian

Ingrédients
- 4 large apples, peeled and chopped
- 1/2 cup water
- 3 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Pinch of of salt
Instructions
- In a medium-sized saucepan, combine the chopped apples, water, brown sugar, cinnamon, nutmeg, and salt.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer, stirring occasionally.
- Cook the apples until they are tender and the liquid has thickened, about 15-20 minutes.
- Stir in the lemon juice and vanilla extract, then remove the saucepan from the heat.
- Allow the compote to cool slightly before serving, either warm or chilled.
