Chia Seed and Coconut Milk Porridge - Vegan
The Chia Seed and Coconut Milk Porridge, or as we like to call it, the Tropical Chia Coconut Delight, is the quintessential breakfast for anyone craving a nutritious, vibrant start to their day. The creamy base is made from chia seeds and coconut milk, sweetened lightly with honey or maple syrup, and infused with a hint of vanilla.
Ingrédients
- 1/2 cup chia seeds
- 2 cups coconut milk
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh mango, diced
- 1/2 cup fresh pineapple, diced
- 2 tablespoons shredded coconut
- 1/4 cup granola
- 1 tablespoon chia seeds (for garnish)
Instructions
- In a medium bowl, whisk together the chia seeds, coconut milk, honey (or maple syrup), and vanilla extract.
- Cover the bowl and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken.
- Before serving, stir the porridge well to break up any clumps.
- Divide the chia seed porridge into bowls.
- Top each serving with diced mango, diced pineapple, shredded coconut, granola, and additional chia seeds.
