Ingrédients
- 1 cup pitted dates
- 1/2 cup dried cherries
- 1/2 cup almond meal
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup mini vegan chocolate chips
Instructions
- In a food processor, blend the pitted dates until they form a sticky paste.
- Add dried cherries, almond meal, cocoa powder, maple syrup, vanilla extract, and salt to the food processor. Blend until the mixture is well combined and forms a dough-like consistency.
- Stir in the mini vegan chocolate chips by hand.
- Using your hands, roll the mixture into small bite-sized balls.
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
