Ingrédients
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1 large egg
- 1/2 cup Greek yogurt
- 1/4 cup applesauce
- 1 teaspoon vanilla extract
- 1 cup mixed berries (blueberries, raspberries, chopped strawberries)
- 1/4 cup milk
Instructions
- Preheat the oven to 375°F (190°C) and line a mini muffin tin with paper liners or lightly grease with cooking spray.
- In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, and salt.
- In a separate bowl, beat the brown sugar and egg until well combined. Stir in the Greek yogurt, applesauce, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir gently until just combined. Fold in the mixed berries and milk until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
