Ingrédients
- 1 cup almond flour
- 1/4 cup unsalted butter, melted
- 1/4 cup powdered erythritol
- 1 teaspoon vanilla extract
- 8 ounces ounces cream cheese, softened
- 1/4 cup powdered erythritol
- 1/2 teaspoon vanilla extract
- 8 medium strawberries, diced
Instructions
- In a bowl, combine almond flour, melted butter, powdered erythritol, and 1 teaspoon vanilla extract. Mix until well combined to form the crust.
- Press the mixture into the bottom of a mini muffin tin, creating a firm and even base. Set aside.
- In another bowl, beat the softened cream cheese until smooth. Add the powdered erythritol and 1/2 teaspoon vanilla extract, and continue to beat until well incorporated.
- Fold in the diced strawberries gently.
- Spoon the cream cheese mixture over the crust in the mini muffin tin, filling each cup to the top.
- Refrigerate for at least 2 hours until set.
- Carefully remove the cheesecake bites from the muffin tin and serve chilled.
