Ingrédients
- 1 pound large shrimp, peeled and deveined
- 2 medium zucchini, spiralized
- 3 tablespoons butter
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup chicken broth
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup chopped parsley
- Salt to to taste
- Black pepper pepper to taste
Instructions
- Heat the butter and olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes. Sauté until the garlic is fragrant, about 1-2 minutes.
- Add the shrimp to the skillet. Cook until the shrimp turns pink and opaque, about 3-4 minutes per side.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add the chicken broth and lemon juice. Bring to a simmer.
- Add the zucchini noodles to the skillet. Toss to coat the zoodles in the sauce and cook for 2-3 minutes until just tender.
- Return the shrimp to the skillet. Toss everything together until well combined.
- Season with salt and black pepper to taste and sprinkle with chopped parsley before serving.
