Ingrédients
- 2 large avocados
- 1/2 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon chipotle chili powder
- 1 tablespoon lime juice
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the avocados in half, remove the pits, and slice each half into 4-5 wedges.
- In a shallow bowl, mix together the almond flour, grated Parmesan, garlic powder, smoked paprika, salt, and black pepper.
- In another bowl, whisk the eggs.
- Dip each avocado slice in the egg, then coat with the almond flour mixture. Place each coated slice on the prepared baking sheet.
- Bake for 12-15 minutes or until golden and crispy.
- While the fries are baking, prepare the chipotle mayo by mixing the mayonnaise, chipotle chili powder, and lime juice in a small bowl.
- Serve the avocado fries hot, with chipotle mayo on the side for dipping.
