Potato Blinis - Vegetarian

Ingrédients
- 2 large potatoes, peeled and grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chives, finely chopped
- 1 tablespoon dill, finely chopped
- 1/2 cup sour cream
- 2 tablespoons olive oil
Instructions
- Squeeze the grated potatoes to remove excess water and place them in a bowl.
- Add the eggs, flour, baking powder, salt, and black pepper to the grated potatoes. Mix well.
- Heat the olive oil in a non-stick skillet over medium heat.
- Spoon the potato mixture into the skillet, forming small pancakes.
- Fry each blini for about 3 minutes per side, or until golden brown and crispy.
- In a small bowl, mix the sour cream with chopped chives and dill.
- Serve the blinis warm topped with a dollop of herbed sour cream.
