Ingrédients
- 4 medium zucchinis
- 1 pound ground beef
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 small small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut each zucchini in half lengthwise and scoop out the center to create a boat shape. Set aside the scooped-out flesh.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, approximately 5-7 minutes. Drain excess fat if necessary.
- Chop the reserved zucchini flesh and add it to the skillet along with the drained diced tomatoes, oregano, basil, salt, and black pepper. Stir to combine and cook for an additional 5 minutes.
- Arrange the zucchini boats in a baking dish and spoon the beef mixture into each boat, packing it in tightly.
- Top each zucchini boat with shredded mozzarella and grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, until the zucchini is tender and the cheese is golden and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
