Ingrédients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, peeled and diced
- 2 celery celery stalks, diced
- 4 cups vegetable broth
- 2 cans white beans, drained and rinsed
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups kale, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated parmesan cheese (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and cook until translucent, about 5 minutes.
- Stir in the garlic, carrots, and celery, cooking until they start to soften, around 5 minutes more.
- Pour in the vegetable broth, white beans, and diced tomatoes.
- Add the thyme, rosemary, bay leaf, salt, and black pepper.
- Bring to a boil, then reduce the heat and let simmer for 20 minutes.
- Stir in the chopped kale and parsley, cooking until the kale is tender, about 5 minutes.
- Remove the bay leaf. Taste and adjust seasoning if needed.
- Serve hot, garnished with grated parmesan cheese if desired.
