BBQ Chickpea Salad - Vegan

This dish features crispy BBQ-coated chickpeas, nestled amongst fresh mixed greens, cherry tomatoes, red onion, corn, and avocado. Ingrédients
- 1 can chickpeas, drained and rinsed
- 1/2 cup BBQ sauce
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red red onion, thinly sliced
- 1/2 cup corn kernels
- 1/2 avocado, avocado, diced
- 1/4 cup shredded carrots
- 1/4 cup cilantro, chopped
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chickpeas with BBQ sauce until well coated.
- Spread the coated chickpeas on a baking sheet lined with parchment paper and bake for 20 minutes until crispy.
- In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, corn, avocado, shredded carrots, and cilantro.
- In a small bowl, whisk together the olive oil, balsamic vinegar, smoked paprika, salt, and black pepper.
- Once the BBQ chickpeas are ready, add them to the salad bowl.
- Pour the dressing over the salad and toss until everything is well mixed.
