Vegetarian Cauliflower Fried Rice - Vegetarian
The Hearty Veggie Cauliflower Fried Rice is a vibrant and satisfying dish that combines the fresh flavors of vegetables with the unique texture of riced cauliflower. This dish is a perfect low-carb alternative to traditional fried rice, yet it does not compromise on flavor or heartiness.
Ingrédients
- 1 medium cauliflower, riced
- 1 tablespoon olive oil
- 2 large eggs, beaten
- 1 cup peas and carrots, frozen mix
- 1/2 cup green onions, sliced
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant, about 1 minute.
- Stir in the peas and carrots, and cook until tender, about 4-5 minutes.
- Push the vegetables to the side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked and then mix with the vegetables.
- Add in the riced cauliflower and soy sauce, stirring to combine all ingredients. Cook for another 5-7 minutes until the cauliflower is tender.
- Stir in the sesame oil, salt, black pepper, and green onions. Cook for an additional 2 minutes.
- Remove from heat, garnish with fresh cilantro, and serve hot.
