- 2 cups fresh spinach, chopped
- 1/4 cup green onions, finely chopped
- 1 tablespoon fresh dill, chopped
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or by greasing it lightly.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
- In a separate bowl, whisk together the milk, olive oil, and eggs until fully combined.
- Slowly add the wet ingredients to the flour mixture, stirring gently until just combined. Avoid overmixing.
- Fold in the feta cheese, chopped spinach, green onions, and fresh dill into the batter until evenly distributed.
- Evenly spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
